We love it because the Chemex was perfect right out of the gate.
Since the original patent in 1943, it hasn't required changing or improving.
You gotta love that kind of brilliance.
We love Chemex because it's simple to use:
Filter, coffee, and water that's poured after sitting 30 seconds post-boil.
We love Chemex because it takes a little time and attention.
Only about 4 minutes worth, and it's one of the best ways you'll find to spend 4 minutes.
(Add the coffee into the filter, and slowly pour water over the grinds in a mesmerizing spiral pattern.)
It's hypnotic, it's relaxing, it's a zen thing.
Last but not least, we love the Chemex because it makes a great cup of coffee.

How to Brew Coffee in Your Chemex
1. Get your grind on (drip grind).
2. Use Chemex filters - they've been washed four times, which means you get all the coffee flavour and none of the paper flavour.
3. Use 1 rounded tbsp for every 5 oz cup. Go stronger if you like! Chemex brews clean and strong, never bitter.
4. Bring your water to boil, then let stand for 30 seconds.
5. Pour a small amount of water over coffee and watch it "bloom."
6. After the bloom, slowly pour more water into grinds until the water level is about 1/2" away from the top edge of the glass.
7. Slowly pour the rest of the water - this is where the spiral pattern comes in - over the grounds.
8. Remove the filter and grinds. Makes excellent compost.
9. Take time to enjoy the aroma and flavours of your coffee. Chemex Coffee is one of life's small (but wonderful) indulgences.
"Iconic" as applied to the Bialetti means highly original, influential, unique. Oh and yes, classic.

But! does it make great coffee??
No surprise, the Bialetti makes delicious, authentic Italian espresso. Of course it does.

We love you and want you to have the best coffee-brewing experience possible. So let's break it down:
1. Of course, start with freshly roasted Cupper's Coffee. Oh yes.
2. Be sure your coffee is the right grind for your brewer. Ask our staff for guidelines. Clean your grinder often. Old oil from the coffee grinds will effect the flavours of your new cup!
3. ALWAYS use fresh, cold water.
4. Make sure your coffee brewer is clean clean clean. Again, those old oils from the coffee can mess up the flavours. We don't want that for you.
5. Use the right amount of coffee. This is an art and science in and of itself... see below.
6. Let the coffee cool in the cup just a bit before you take your first drink. Hold the coffee in your mouth for a few seconds. Just for a few short seconds, give the flavours your full attention. You won't be disappointed!
How much coffee should you use?
It's one of the most common (and confusing) coffee issues: how much to use? The answer depends on:
We've come up with a guideline for you to start with... and you tweak from there. By the way, a "scoop" is roughly a rounded tablespoon.

How are you grinding your coffee? The right grinder and grind setting can make your home-brewed coffee AMAZING.
Let's assume you're buying Cupper's freshly roasted coffee, which means you're getting the best beans at the best roast... then the next most important thing is THE GRIND:
KEEP YOUR GRINDER CLEAN.
Coffee is a food product, and like any other food-processing equipment, your coffee grinder should be regularly cleaned. The Bodum Bistro grinders are easy to clean: take the top off, brush/vacuum out the inside, and run the top through the dishwasher. Done.

This year's Kona is a medium roast with a colour of dark caramel. There's a wonderful aroma of macadamia nut from the freshly roasted bean - which makes sense because the nut farms and coffee farms are grown in the same areas. Some of Cupper's baristas could also detect hints of candied almond or licorice-anise in the aroma.
HOW TO "CUP" LIKE A PRO
OUR KONA EXTRA FANCY FLAVOUR PROFILE
FLAVOUR PROFILE: The Kona growing season is 10 months long, which means the beans are larger with a more concentrated flavour. This coffee has DEPTH, which means there are layers of flavour. Even after you swallow the coffee, you'll notice new flavours on your tongue.
This year's Kona Extra Fancy starts with a tangerine brightness that really lights up your taste buds. As the flavour develops, you'll notice some stone fruit notes, followed by caramelized sugar. The Kona finishes with a very full toasty flavour, almost like a graham cracker. Amazing.
For between 4 to 10 days after roasting, the flavour of the Kona will continue to develop...it becomes even more smooth, with more depth. We time our roasts so that your Kona will be at or approaching it's most flavourful.
The Aeropress uses a combination of pressure and heat to extract the coffee. Any of Cupper's coffees are excellent made in the Aeropress. We suggest the Ethiopian Yrgecheffe, our Mexican Chiapas Dark Roast, or for a more mellow flavour, our Old World Blend Café Barcelona.

Many coffee drinkers think that these stove-top brewers only make espresso. Not true!! It all depends on how much coffee you use and how tightly you pack the coffee. In Europe, this is THE most common way to brew your daily coffee.
There's a good reason for that: they're easy to use and clean, and they make excellent coffee.
