First, lighter roasted beans retain more of their original flavours after roasting. Lighter roasts have more caffeine than a dark roast. (Okay, so it’s only a VERY little bit more, but when you really need it, you really need it!) Finally, these roasts generally have brighter, more citrusy notes, and a bit more acidity.
