Chiapas is noted for its overall balance; sweetness and sharpness combine to provide a full, rich flavour experience. The aroma? Just imagine a piece of toast with caramel. The flavours are rich and deep. There’s dark rye bread, a hint of molasses with a hint of smoky, scotch-like flavour towards the finish. Very few coffees reveal excellent flavours at more than one roast but this is wonderful at both medium and dark roasts.
