Vegan Pepper Citrus Steak Stir Fry – Sounds impossible! But using an ancient product called Seitan, enjoy the tastes and textures of faux steak in this tangy stir fry.

Seitan is a unique product with a long history. It’s primary ingredient is gluten, the main protein found in wheat. Seitan production involves washing wheat flour dough until the starch granules are gone. The left-over gluten is a sticky, elastic mass, which is then cooked to make seitan. Seitan has been a staple in Chinese, Korean and Japanese cuisine for centuries.
 
It is only in the past few decades that it’s become popular with vegetarians and vegans as well. It is used as a meat substitute in many recipes. When cooked it has a chewy texture that is more like cooked meat than other meat alternatives. It lends itself well to recipes that need tougher cuts of meat, like steak.

In this recipe we used Belberry Sicilian Mandarin Vinegar. The sweet Sicilian Mandarins round out the acidity of the vinegar. Belberry Royal Selection has a large selection of gourmet vinegars available.

Ingredients:
Instructions:
  1. Mix soy sauce, brown sugar, Belberry Sicilian Mandarin Vinegar, and cornstarch together in a bowl
  2. Core bell peppers and cut up into ½ inch pieces
  3. Heat up olive oil in a large skillet over medium heat.
  4. Cut seitan into ½ inch pieces and add to skillet. Cook until browned, about 5 minutes
  5. Turn the heat to high and add bell peppers. Fry until the peppers are tender
  6. Turn heat down to med-high and stir in the soy sauce – vinegar mixture. Allow the sauce to thicken.
  7. Serve over a bed of cooked rice and enjoy your Vegan Pepper Citrus Steak Stir Fry!
